Made with the intent to be displayed on our first showpiece, the Spiced Hazelnut Bon Bon is filled with a spiced ganache and one whole caramelized hazelnut.

Spiced Pear Bar

The spiced pear is filled with a spiced pear jelly, layered with a hazelnut praline crispy element, and topped with a ganache.

Banana's Foster Bon Bon

Coated in couverture milk chocolate, these Banana Fosters are simply filled with banana fosters ganache.

Key Lime Bon Bon

These Key Lime Bon Buns are filled with a key lime ganache piped into a white chocolate shell, finished with a transfer sheet to create a fun and unique image.

These Calvados Bon Bons are filled with a caramelized calvados filling which is piped into a white chocolate shell.

Trois-Fermes

Traditionally known as Trois-Fermes, also called Three Brothers, this confection starts out with tempered light gianduja, topped with caramelized hazelnuts, and lastly coated in dark couverture chocolate.

Salted Caramel Lollipops

With a chocolate shell providing a base for these lollipops, they are then filled with a vanilla bean caramel, and then topped with a dark chocolate ganache. Once fully set, we then went ahead and dipped these in tempered dark chocolate, and added a touch of popping sugar, to create a unique and fun twist on a classic lollipop.

Bon Bon Liquor

A mixture of sugar and water is boiled, followed by the addition of liqueur. The hot sugar is deposited into starch molds which is then covered by more starch and left to crystalize overnight. When done successfully, you will be left with a round bon bon liquor, with a center filled with liqueur. To finish the product, dip the dusted-off centers in couverture.
